- 1 head garlic, (~10 cloves garlic)
- 2 pucks Boursin cheese, any flavor (Garlic & Chive recommended)
For serving
- Olive oil, for drizzling
- Red pepper flakes, for garnish (optional)
- Minced fresh chives, for garnish
- Crostini, crackers, or vegetables, for dipping
Instructions
- Preheat your oven to 400ºF (200ºC).
- Into an 8×8-inch baking dish, add the ¼ cup olive oil and 2 tablespoons of tomato paste. Whisk these two ingredients together until well combined and smooth, creating a flavorful base. Prepare the head of garlic by trimming off the very top to expose the cloves, ensuring they remain intact within their skin. Add the diced white onion, sea salt, ground black pepper, cherry tomatoes, and the prepared head of garlic to the dish. Toss all the ingredients thoroughly until they are evenly coated with the oil and tomato paste mixture.
- Gently nestle the two Boursin cheese pucks into the tomato and garlic mixture, making sure they are partially submerged but not fully covered. Cover the baking dish tightly with aluminum foil. Bake in the preheated oven for 25-30 minutes, or until the Boursin cheese is beautifully melted and slightly browned, and the cherry tomatoes have burst open, releasing their sweet juices.
- Carefully remove the baking dish from the oven. Using oven mitts, carefully squeeze the roasted garlic cloves out of their skin and into the dip. They should be soft and buttery. Use a fork to gently mash the tender garlic cloves and the burst tomatoes. Then, stir all the ingredients together in the dish until you have a creamy, cohesive dip.
