- 1/3 cup marinara sauce or pesto
- 1/3 cup mozzarella cheese
- 1 tablespoon olive oil
- Pinch of oregano
- Salt and pepper, to taste
- 1/4 cup diced fresh basil
Instructions
- Preheat your oven or grill to 375ºF (190°C).
- Prepare the sweet potato by slicing off the ends. Then, stand the potato on one end and carefully slice it lengthwise into 1/4-inch thick pieces. These will be your “pizza” bases.
- Rub the top of each sweet potato slice with olive oil (or spray with olive oil cooking spray) and season generously with salt and pepper to taste.
- Lay a piece of tin foil directly onto the grill grates, or line a baking sheet with tin foil and spray with olive oil cooking spray.
- Transfer the seasoned sweet potato slices onto the prepared tin foil. Bake or grill for approximately 10 minutes, or until the sweet potato is almost fork-tender.
- Carefully flip the sweet potato slices. Spread about 1 tablespoon of marinara sauce (or 1/2 tablespoon of pesto) evenly over each slice. Sprinkle with 1 tablespoon of mozzarella cheese and add a dash of fresh oregano. Continue to cook for an additional 3-5 minutes, or until the cheese is beautifully melted and bubbly.
