Instant Pot Hamburger Soup Essentials: The Ultimate Comfort Food

Hamburger soup, often affectionately known as ground beef vegetable soup, holds a special place in the heart of Midwestern comfort food. Imagine a classic minestrone, but with a hearty, savory twist that feels like a warm hug in a bowl. It’s loaded with a delightful medley of vegetables, tender ground beef, and satisfying noodles – truly everything you could wish for in a soup. This recipe embraces that traditional spirit, making it accessible and incredibly quick with your Instant Pot.

One of the biggest advantages of using an Instant Pot for this hamburger soup is the sheer convenience. You can literally add most of your ingredients, set it, and let the pressure cooker work its magic. While the actual cook time for this recipe is a mere 3 minutes under pressure, remember to factor in approximately 20 minutes for the Instant Pot to build pressure before the countdown begins. This “hands-off” cooking approach is a game-changer for busy evenings.

The true win here is the ability to set it and forget it, allowing you to focus on other tasks while your delicious, healthy meal cooks itself. A 3-minute cooking time under pressure is hard to beat when you’re craving a quick yet nutritious dinner. We’ve gathered some essential tips and tricks below to help you perfect this Instant Pot Hamburger Soup recipe and ensure it becomes a staple in your meal rotation. Get ready for some culinary fun!

Step-by-Step Guide to Instant Pot Hamburger Soup

Step 1: Building the Flavor Base – Sauté Ground Beef and Onion

The secret to any deeply flavorful soup begins with a strong foundation, and our Instant Pot Hamburger Soup is no exception. Start by activating your Instant Pot’s Sauté function. Once hot, add your ground beef to the pot. Break it up with a spatula and brown it for about a minute. This initial browning creates rich, savory notes that will permeate the entire soup. After a minute, introduce the chopped onion to the pot.

Continue to cook the beef and onion for an additional 2 minutes, stirring frequently. This ensures the onions soften and become translucent, releasing their sweet aromatic compounds that complement the beef perfectly. Don’t underestimate this step; it’s crucial for developing a robust, savory base flavor that elevates this healthy hamburger soup from good to truly outstanding.

Step 2: Layering in the Goodness – Add All Remaining Ingredients

Once your ground beef and onion are beautifully sautéed, it’s time for the most satisfying part: adding the rest of your ingredients! This is where the versatility of this Instant Pot soup truly shines, allowing you to customize it to your family’s preferences. Here’s a detailed look at what you’ll need, along with some suggested variations:

  • Garlic: Minced garlic adds a pungent, aromatic depth. Don’t skip it!
  • Sweet Potato: For a touch of sweetness and vibrant color, sweet potatoes are fantastic. If you prefer a more traditional flavor, feel free to swap them out for additional regular potatoes or even carrots.
  • Yukon Gold Potato: These potatoes hold their shape well and contribute a creamy texture without becoming mushy. Russet potatoes can also be used, but may break down more.
  • Diced Tomatoes: A can of diced tomatoes provides acidity and chunks of juicy tomato, essential for that classic hamburger soup taste.
  • Tomato Sauce: This helps create a rich, thick broth consistency and enhances the overall tomato flavor.
  • Frozen Veggies: The ultimate convenience! Grab a bag of your favorite mix – corn, peas, and carrots are a popular choice and add a burst of color and nutrition. You can also use fresh chopped vegetables like celery, bell peppers, or green beans.
  • Spices: A blend of Italian seasoning and ground oregano (our secret weapon!) brings warmth and complexity. Don’t be shy with the seasonings – they make all the difference.
  • Beef Broth: The liquid foundation of our soup. Use a good quality beef broth for the best flavor. Low-sodium options are great if you’re watching your salt intake.
  • Noodles: Macaroni elbows are a classic choice for hamburger soup, but any small pasta shape like ditalini, small shells, or even broken spaghetti will work beautifully.

After incorporating all these wonderful ingredients into your Instant Pot, give everything a good stir to ensure even distribution of flavors. Secure the lid, ensuring it’s properly sealed. Now, turn the steam release valve to the “Sealing” position. Set your Instant Pot to “Manual” or “Pressure Cook” mode on “High Pressure,” and set the timer for just 3 minutes. While the actual cook time is short, allow approximately 20-25 minutes for the pot to build pressure before the cooking cycle begins. This hands-off cooking allows you to relax while your delicious soup comes together.

Expert Tips for a Flawless Instant Pot Hamburger Soup

To ensure your soup-making experience is smooth and delicious, keep these helpful tips in mind:

  • Noodles for Meal Prep: If you’re planning to enjoy this soup throughout the week or freeze portions for later, consider cooking the noodles separately. Noodles cooked directly in the soup can become overly soft and mushy after soaking in the broth for multiple days, especially when reheated. Cook them al dente on the stovetop and add them to individual servings just before eating.
  • Adjusting Broth Consistency: It’s natural for soup to thicken as it cools and sits in the refrigerator, especially with starchy vegetables and noodles absorbing liquid. If you find your leftovers too thick, simply add a splash more beef broth or water when reheating. Stir until it reaches your desired consistency.
  • The Magic of Ground Oregano: While dried oregano is perfectly fine, we’ve discovered a new appreciation for ground oregano. The finer texture allows its robust, earthy flavor to infuse more deeply and quickly into broths and sauces, creating an “unreal” depth of flavor that dried leaves can sometimes miss. It’s a small change that makes a big difference in this hamburger soup.
  • Pressure Build-Up: Don’t be alarmed by the 20-25 minutes it takes for your Instant Pot to come to pressure before the 3-minute cook time starts. This is normal and part of the process. Plan your meal timing accordingly!
  • Customizing Vegetables: Feel free to swap or add other vegetables based on what you have on hand or what your family enjoys. Zucchini, bell peppers, or even leafy greens like spinach (added after cooking) can be wonderful additions.

Step 3: The Grand Finale – Quick Release and Serving

Once the Instant Pot’s timer signals the end of its 3-minute cooking cycle, it’s time for the final, exciting step: quick-releasing the pressure. Carefully turn the steam release valve to the “Venting” position (or press the quick release button, depending on your model) and allow the steam to fully escape. Once the float valve drops, you can safely remove the lid to reveal your beautifully cooked Instant Pot Hamburger Soup!

Serve this comforting soup immediately while it’s piping hot. We love to garnish our hamburger soup with a sprinkle of fresh chopped parsley, which adds a lovely burst of color and fresh flavor. However, feel free to get creative with your toppings! Consider a dollop of sour cream, a sprinkle of shredded cheddar cheese, a dash of hot sauce for a kick, or simply enjoy it with a warm, crusty piece of bread for dipping. Every spoonful is a testament to quick, easy, and delicious home cooking.

Mastering Meal Prep: Freezing Your Instant Pot Hamburger Soup

This Instant Pot Hamburger Soup is an excellent candidate for meal prepping and freezing, ensuring you have healthy, homemade meals ready on demand. Our top tip for freezing this recipe revolves around the noodles: do not cook the noodles directly in the Instant Pot with the rest of the soup if you plan to freeze it. We repeat, they will get soggy and unpleasant upon thawing and reheating.

Instead, prepare your Instant Pot Hamburger Soup as directed, but omit the noodles entirely during the initial cooking process. Once the soup is cooked, allow it to cool completely before transferring it to freezer-safe containers. High-quality Tupperware or gallon-size freezer bags work best. If using bags, try to remove as much air as possible before sealing to prevent freezer burn. Label with the date and freeze for up to 3 months.

When you’re ready to enjoy your frozen soup, simply thaw it overnight in the refrigerator or gently reheat it on the stovetop until simmering. At this point, cook fresh noodles separately on your stovetop according to package directions. Drain the noodles and stir them into your reheated soup just before serving. This method ensures perfectly textured noodles every time, making your meal prep efforts truly worthwhile.

  • 4 garlic cloves, minced
  • 1 medium sweet potato, cubed
  • 1 Yukon gold potato, cubed
  • 3 bay leaves
  • 1 tablespoon Italian seasoning
  • 2 teaspoons ground oregano
  • 1 15-oz. can diced tomatoes
  • 1 15-oz. can tomato sauce
  • 6 cups of beef broth*
  • 2 cups frozen veggies, we used a carrot, peas, and corn mix
  • 2 cups macaroni elbows

Instructions

  1. Turn on the Instant Pot’s sauté feature and add ground beef to the pot. Sauté for 1 minute and then add onion. Cook for an additional 2 minutes using a spatula to break up the ground beef.
  2. Next, add the rest of the ingredients (garlic, sweet potato, Yukon potato, bay leaves, Italian seasoning, ground oregano, diced tomatoes, tomato sauce, beef broth, frozen veggies, macaroni elbows), stir well, and place the cover on the Instant Pot.
  3. Turn the pressure valve to “Sealing,” select “Manual” or “Pressure Cook” mode, set to “High Pressure,” and set the timer to 3 minutes.* It will take around 20-25 minutes for the Instant Pot to build up pressure to start counting down from 3 minutes.

  5. Serve immediately, garnished with fresh parsley or your favorite toppings.*

Tips & Notes

  • Pressure build: Although the cook time for this recipe is 3 minutes, it does take the Instant Pot 20-25 minutes to build pressure. Plan accordingly!
  • Broth: You have the option to add more broth once the soup is done cooking. The soup will naturally thicken once stored in the fridge, so you will likely need to add water or broth to thin it out for reheating.
  • Noodles: If you are meal prepping this recipe, cook the noodles separately. Cook them prior to making the soup or just before serving leftovers. Place noodles and enough water to cover noodles in the Instant Pot and cook on high pressure for 3 minutes. Remove noodles from Instant Pot, strain, rinse with cold water, and set aside. Add noodles to the soup right before eating.
