Ingredients

Cajun Seasoning*

  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon light brown sugar
  • ½ teaspoon dried oregano
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon salt, or more to taste
  • ⅛ teaspoon ground pepper

Jambalaya

  • 1 lb. cooked large shrimp, tail on
  • 10 oz. fully cooked andouille sausage, sliced
  • 2.5 tablespoons olive oil, divided
  • ½ large white onion, minced
  • 5 cloves garlic, smashed and minced
  • 1 cup long-grain white rice
  • 1 large red bell pepper, diced
  • 1 large green bell pepper, diced
  • 1 15-oz. can diced tomatoes
  • 1.5 cups chicken broth

Instructions

  1. First, combine all the spices for the homemade Cajun seasoning in a small bowl. Mix well and set aside.
  2. Then, add shrimp and sliced andouille sausage to a large bowl and sprinkle on 1 tablespoon of the Cajun seasoning. Toss everything together and set it aside.
  3. Turn on the Instant Pot’s “Sauté” feature. Add 1.5 tablespoons of olive oil. When the olive oil is fragrant, add the minced onion and garlic and sauté for 3-5 minutes or until the onions are translucent and soft.
  4. Turn off the “Sauté” feature. Add in the long-grain white rice and stir to combine. Then add the diced bell peppers, the remaining 2 tablespoons of Cajun seasoning, the 15-oz can of diced tomatoes (undrained), and the chicken broth. Stir well to combine all ingredients.
  5. Close the lid and cook on high pressure for 8 minutes.
  6. Perform a quick release of pressure from the Instant Pot and immediately uncover. Add the seasoned shrimp and andouille sausage to the pot, mix gently to combine. Place the cover back on and let it steam for 10 minutes using the residual heat.
  7. Uncover the Instant Pot, mix everything once more, and taste. Adjust salt or any additional seasoning as needed. Serve immediately and enjoy.

Tips & Notes

  • Cajun Seasoning: If you have our homemade Cajun seasoning already prepared in your pantry, you’ll need around 3 tablespoons total for this recipe (1 tablespoon for meat, 2 for the main pot).
  • If your sausage and shrimp are not as warm as you’d like after the steaming process, you can gently turn on the “Sauté” feature for 1-2 minutes, stirring constantly to heat everything through without burning the rice.
