- 1.5 lbs. fresh tomatillos, rinsed and husks removed (or canned whole tomatillos, poaching liquid discarded)

- Put all of the ingredients except for the cilantro and salt in a sauce pot. Add just enough water to cover the vegetables. (If using canned tomatillos, drain away the brine and put them directly into the food processor in step 4).
- Bring to a boil over high heat.
- Turn heat to low and simmer for 10 minutes, allowing vegetables to soften.
- Strain away about half of the cooking water (or more, if you prefer a thicker salsa) and transfer the cooked ingredients to a food processor or blender.
- Add the fresh cilantro and the ½ teaspoon of Kosher salt to the food processor with the cooked ingredients.
