Cashews

  • 1/2 cup whole cashews
  • 1 tablespoon maple syrup
  • 2 teaspoons black sesame seeds, or white sesame seeds

Salad

  • 1 cup carrot sticks
  • 1 cup chopped snow peas
  • 1 cup sliced English cucumbers
  • 1 large red bell pepper, diced
  • 1/2 small red onion, minced
  • 1/4 cup chopped cilantro
  • 1/4 teaspoon salt
  • 8 cups greens, such as baby kale, spinach, or arugula

Salad Dressing

  • 3 tablespoons olive oil
  • 1/2 tablespoon lemon juice
  • 1/8 teaspoon white miso paste
  • 1/4 teaspoon fresh grated ginger
  • 1.5 teaspoons maple syrup

Instructions

  2. Prepare the Salmon: Gently blot each salmon filet dry on all sides using paper towels. This step helps the marinade adhere better and promotes a crispier skin. Place the salmon in a shallow bowl or on a plate, skin-side up.
  3. Marinate the Salmon: Pour the prepared miso-ginger marinade evenly over the salmon filets. Allow the salmon to marinate for at least 15 minutes. For a deeper flavor, you can marinate it for up to 30 minutes at room temperature, or up to an hour in the refrigerator.
  4. Preheat Oven and Prep Baking Sheet: While the salmon is marinating, preheat your oven to 400ºF (200ºC). Lightly spray a large baking sheet with a nonstick cooking spray or line it with parchment paper for easier cleanup.
  5. Assemble Salad and Dressing: In a large mixing bowl, combine all the fresh salad ingredients (carrot sticks, snow peas, English cucumbers, red bell pepper, red onion, cilantro, and salt).
