  • 1 15-oz. can full-fat coconut milk, well-shaken
  • 1/4 cup water
  • 1 tablespoon honey (or maple syrup for a vegan option)

Instructions

  1. Place all ingredients inside of your Instant Pot and stir gently to combine.
  2. Secure the lid and set the valve to “Sealing.” Cook on high pressure for 5 minutes. (It will take around 8 minutes for the pot to build pressure before the countdown begins.)
  3. Once the timer goes off, allow the pressure to natural release for 10 minutes. After 10 minutes, quick release any remaining pressure by carefully moving the valve to “Venting.”
  4. Remove the top of the Instant Pot and use a fork to fluff the rice. All of the liquid should have dissolved, leaving you with perfectly fluffy, aromatic coconut rice.
