Instructions

  • Preheat your oven to 375ºF (190°C). Lightly spray a standard-size 9×13-inch casserole dish with coconut oil cooking spray, ensuring good coverage to prevent sticking.
  • Add all of the solid ingredients for the quinoa casserole – uncooked sprouted quinoa, diced sweet potato, sliced red pepper, sliced green pepper, sliced red onion, and frozen peas – directly into your prepared casserole dish. Give them a gentle toss to combine evenly.
